The class begins Monday, March 8<sup>th</sup>. Contact Drene Johnson at (707) 253-6100 ext. 102 for applications and more information.</p>
<p>The Culinary School offers a structured hands-on food service training program. It provides mentoring, teaches job and life skills, and challenges students to take charge of their lives. Some of the skills taught at the School include:</p>

<li>Kitchen Safety &amp; Sanitation</li>
<li>Equipment &amp; Knife Usage</li>
<li>Cooking Principles &amp; Techniques</li>
<li>Produce, Meat, Fish &amp; Supplies</li>
<li>Stocks, Soups, &amp; Sauces</li>
<li>Menu Planning &amp; Recipes</li>
</ul>
<p>Applications for Class Five of the Culinary School will be accepted until June 1, 2010. <p style="padding-left: 30px;"><em>"Michael Paik teaches the culinary program through Community Action Napa Valley, or CANV, which gives homeless and low income people an introduction to the food service industry.</em></p>
<p style="padding-left: 30px;"><em>Give a man a fish and he eats one time. Teach a man to fish and he eats for a lifetime.<br /><br />Thinking along similar lines, Michael Paik, a veteran chef, has committed himself to teaching kitchen skills to homeless and other low-income people in Napa County who are having trouble feeding themselves, not to mention putting a roof over their heads. When the students graduate from Paik&rsquo;s three-month culinary course, they are equipped to get self-supporting, entry level jobs in Napa Valley restaurants."</em></p>
